Does your prop have the PVS holes in it? If so you need to plug some holes or remove some holes. From the way it sounds you need to plug some of them to prevent the motor from over reving on the hole shot.

I would tend to think the 24 would bite well on take off. Anthony is our resident boat mechanic here, so his advise is much more reliable then mine.
A few more questions to answer and maybe he can narrow it down a little more
1) SS prop I assume, and it being a Merc I assume its a Merc prop.
2) Engine Height over the transom?
3) Level the boat on the trailer and trim the engine level and measure from the bottom of the pad to the center of the prop hub
Before you go changing out props which can get very expensive, it might be best to find a buddy who is running a 25 pitch prop and try his on for size and see what it does. You might be suprised and find that your current prop is just fine and just need to be re worked. Ther is a fellow up in Tenneesee that reworked Anthonys prop and he said he gain another 5mph.

I'm running around 5500-6000 rpms at wot, there has been a few scares when it hit the 7000 mark!!! I can keep it at 5500 if I dont trim it up as far(which I lose some top end) I've got real good water, about 15-18psi at wot,so I am just lost!

I would say if you hit 7000 RPM You probably need to go to a 25pitch then maybe even a 26. WOW those are some rod bending reed eating numbers there lol
