For the livewell pumps there are a few things to test. First, I would check to see if the pumps work. The easiest way to do that is to go into the bilge area and find the livewell pumps and simply apply power to them. I would use some splice connectors so that you won't have to acutally cut the wire coming off of the pumps. Just run a + and - from your battery and splice them into the pumps. If the pumps run, then you know the issue is between the battery and the switch, the switch itself or from the switch to the pump. If the pumps run, the simply open the splice connectors up and remove them and put some electrical tape on the bit of exposed wire.
To test the wires at the console, I like to use a test light. What I will do is use some nippers to remove a small bit of insulation from the power wire coming into the switch and connect the light. If it lights up, you know that connection is working. Then I will move on to the power wire coming out of the switch. Remove a small bit of insulation and hook up the light. Flip the switch, and if the light turns on, then you know the switch is working. I would bet you have either a bad connetion from the battery to the switch or the switch to the pump. I had an '89 Ranger and basically ended up having to rewire the enitre boat just because water and electircity don't mix well, espically over an extended period of time.
Depth finders are easy to do. Do they have GPS modules in them? If so, I would hook them up to an aux. power switch so that you can cut the power to them. With some units the GPS will continue to draw power even while the unit is off.
If you think you will need some help, I'm in Acworth and would be happy to help if you wanted to bring the boat by.

This is the connector I would use to test. Very easy to quickly attach and does a minimal amount of damage to the existing wires.

I have meters and electrical tools. No wire cutting or exposing...
